This seasonal treat combines an awesome sloppy joe recipe with a creamy, gooey mac and cheese served in an adorable roasted pepper with a jack-o-lantern face! It’s so much fun, and it’s perfect to serve just before heading out trick-or-treating!
Ingredients:
Mac n Cheese (or just use your favorite store bought mix)
- 8 oz. elbow or small shells
- 1 cup heavy cream
- 3 oz. cream cheese
- 1 tsp. onion powder
- 1 cup cheddar
- 1/2 cup smoky gruyere
- 2 slices American cheese, cubed
- salt and pepper to taste
Directions:
Cook pasta according to package. Warm cream in saucepan over medium high heat to a low boil. Add seasonings and cream cheese, melt until smooth. Add remaining cheeses and stir for a thick gooey sauce. Add cooked pasta and stir to combine.
Sloppy Joe
- 1 pound ground beef
- 1 T tomato paste
- 1/3 cup bbq sauce
- 1/4 cup ketchup
- 1/4 cup Worchestershire sauce
- 1/8 cup low sodium soy sauce
Directions:
Brown meat until cooked through. Stir into tomato paste and cook until coated. Add remaining ingredients and bring to a boil. Reduce heat and simmer 5 minutes.
Peppers:
Preheat oven to 400. Cut tops off peppers and remove seeds. Use a paring knife to carefully carve out pumpkin faces. Place peppers and tops on baking sheet in oven for 5 minutes to soften slightly. They will wrinkle a little adding to the ghoulish appearance. Remove and allow to cool a bit. Combine mac n cheese and sloppy joe. Stuff peppers with the mixture, some of it oozing out the faces. Top with extra cheese if you like. Place the lids back on the peppers and return to warm oven for 5 minutes to melt together for ooey gooey spooky goodness.
