Almost every week we have a taco night. And almost every week, we have leftover taco meat that nobody wants as traditional tacos in the following days. So once I realized that was the pattern, I was almost hoping for leftovers that I could use in different ways. I always have some romaine lettuce in the fridge and a can of chili beans in the pantry. Obvious choice is taco salad. I pile on the salsa and other toppings I happen to have…cheese, sour cream, crushed tortilla chips, black olives, jalapeños and Catalina dressing. And if I don’t have chips, I pull out the wonton wrappers and throw a few on a baking sheet and spray with cooking spray. Into the oven at 350 for about 5 minutes, and you have a chip!
I also found that taco meat and all the fixings are wonderful on a baked sweet potato! FYI…that works for leftover fajitas, too! Sweet potatoes are an amazing canvas for almost any flavor. Get creative!
