Barbecue Chicken Flatbread

This idea was inspired by some nachos we had years ago at one of our favorite restaurants. The chips were piled high with juicy shredded chicken, tangy barbecue sauce, diced red onion, shredded cheese and cilantro. It was the most amazing combo of flavors I’d ever had. Then I decided I’d try to make it a little lighter by subbing the chips for a flatbread and making it a pizza. The result was delicious.

Ingredients

  • Rotisserie chicken, pulled/shredded
  • 1/4 cup Barbecue sauce
  • 1/4 cup thinly sliced red onion
  • 1 cup shredded cheddar
  • 1 Tablespoon cilantro, chopped
  • 1 tsp olive oil
  • 1/2 tsp Italian seasoning
  • Flatbread

Directions

Preheat oven to 375.  Brush olive oil onto the flatbread, and sprinkle Italian seasoning on. Place on a cookie sheet into preheated oven for 5-7 minutes just to crisp the crust. Remove from oven. Spoon on the barbecue sauce in a thin layer. Then, pile on the toppings…chicken, onions, cheese, cilantro. Place back in the oven to melt the cheese and warm the ingredients through. Slice up and enjoy!
