Slow Cooker Pesto Chicken

Another really simple crock pot meal perfect for back to school!  This is an easy throw together weekday meal that’s good enough for company!  We moved into our house a couple of years ago, and my sweet friend was nice enough to drop by with a big crockpot of this piping hot delicious chicken.  She says it’s her go-to that she takes to someone when they’ve had a baby or come home from surgery. It was a welcome sight after our long day of hauling boxes up and down stairs.  Of course my kitchen was a mess, so there would be no cooking…so we grabbed some paper plates and plastic utensils and went to town on this one!  And my picky teen even cleaned his plate!  Victory!

And this is literally the recipe! My friend who likes things simple gave it to me, and I scribbled it down…But don’t let the simplicity fool ya…lots of flavor!

Ingredients

  • 1 lb boneless skinless chicken breasts
  • 1 pkg. ranch dressing mix
  • 1 small jar basil pesto (I used about half of my jar)
  • 1 cup low sodium chicken broth

Directions

Stir together all ingredients in slow cooker and cook on high for 3-4  hours or low for 6-7 hours.  Serve over couscous and enjoy!
