It may sound ridiculously basic and simple…but is there anything more sinfully delicious than a grilled cheese sandwich? It’s always the one thing my son will agree to when he shoots down every other idea I present to him. He always asks, “Do we have that cheese I like?” The cheese to which he is referring is gruyere. I have recently discovered the beauty and versatility of this wonderfully melty cheese, and I can’t believe I wasted all these years passing it by at the cheese counter!
Now, I can’t stop at just one cheese. I don’t know if it’s because I was running low on one kind of cheese or another that I combined two different kinds to make it stretch…but I’m sure glad I did. I pull out the pancake griddle, smear some butter across the hot surface, lay two pieces of bread down, and then I place a slice of either American or Cheddar on one piece and top it with some long shavings of gruyere
When the undersides are toasty enough, I assemble them to make the sandwich. If the cheese doesn’t seem gooey enough, I place a stainless steel mixing bowl on top to create a steamy dome to aid in the gooey finish line. That’s it!

For 2 sandwiches:
- 4 slices bread
- 2 slices American or Cheddar cheese
- 2 slices Gruyere cheese
- 1 Tablespoon butter
