Thanksgiving Leftover Egg Rolls

Everyone is always in search of ideas to reinvent those Thanksgiving leftovers. I did this a few years ago, and not only was it fun, it was a completely different way to serve leftovers. It was also a huge hit among family and friends. There’s no set recipe for this. It depends on what you have left and what you like. I would suggest always using turkey and stuffing. And, I definitely recommend making the sauce. Otherwise, play around and have fun with it!

Ingredients:

  • Leftover turkey, chopped
  • leftover stuffing
  • leftover cranberry sauce
  • soy, teriyaki or potsticker sauce to combine with cranberry sauce for dipping
  • leftover packet of hot mustard from Chinese take-out to mix in for spicy sauce (optional)
  • package of shredded cabbage
  • egg roll wrappers
  • oil for frying, or can be baked

Directions:

Take whatever leftovers you happen to have…turkey, stuffing, mac n cheese, gravy to moisten and bind, etc. Place a small amount of leftovers in the wrappers along with cabbage. Wet the edges with a damp finger to make the rolls stick once they are rolled up. Heat oil and drop the rolls in to fry. Alternatively, these can be baked in oven on sheet tray. I would recommend spraying them with cooking spray or brushing with egg wash before baking for a golden brown. For a yummy sweet and savory sauce, stir together cranberry sauce and a little soy or potsticker sauce and hot mustard if using. Play with amounts to your liking.
